Soy Sauce Shrimp Fried Rice

Ingredients:

 1lbs shrimp, peeled and deveined

 2 cups cooked rice (preferably day-old)

1/4 cup thick soy sauce

1/2 cup frozen peas

1/4 cup diced carrots

1 onion, diced

2 cloves garlic, minced

2 eggs, beaten

2 tbsp sesame oil

Instructions:

 1. Heat sesame oil in a large skillet or wok over medium-high heat.

 2. Add shrimp and cook for 2-3 minutes until pink. Remove and set aside.

 3. In the same pan, add onion, garlic, peas, and carrots. Stir-fry for 3-4 minutes.

 4. Push vegetables to one side and scramble the eggs on the other side of the pan.

 5. Add the rice and soy sauce, stirring everything together.

 6. Return the shrimp to the pan and stir until heated through.

 7. Serve immediately.
